I’m fairly good at separating egg yolks from whites the old fashioned way, despite not doing it very often. I’m too lazy to bake anything that requires whipping egg whites into a frothy, peaked mixture, except on rare occasions when I want these particular pancakes. Given all of the above, I will probably never try this technique, but it looks pretty cool.
